Date Walnut & Denholme Gate Summer Honey Cake
225g Sun Flours self raising flour
½ teaspoon ground cinnamon
175g softened butter
100g dark muscovado sugar
3 tablespoons Denholme Gate Summer Honey
2 eggs beaten
2 ripe bananas mashed
100g stoned dates chopped
50g walnut pieces
All ingredients used in this recipe are available to purchase from the Fodder farm shop
Pre heat oven to 160°C/gas 3/fan 130°C.
Put flour, cinnamon, butter, sugar, two tablespoons of the honey, eggs, mashed banana, and chopped dates into a mixing bowl. Beat the mixture for 2 to 3 minutes until well blended.
Spoon the mixture into a well greased 2lb loaf tin, sprinkle the walnuts over the top, and bake for 1 hour until firm to the touch.
Cool for 15 minutes then drizzle over the remaining honey.
